Chicken and Bean Salad

Method
Pre-heat oil to 180°C, place 1 Meadow Vale crispy battered fillet into your deep fryer and cook for 4-5 minutes, for a healthier alternative you can oven bake at 220°C for 20-25 minutes.
While your fillet is cooking prepare the bean salad, in a mixing bowl combine your chopped onion, kidney and garbanzo beans, lettuce and rocket. Slice half a avocado and a wedge of lemon and place into your serving bowl.
Once cooked slice the crispy battered fillet and place on top of your bean salad finishing with a drizzle of salad cream.
