Sweet & Sour Chicken Bites

Method
Start by boiling the rice, using a wok heat the sesame oil and crack the egg into the oil and scramble.
Add the cooked rice and soy sauce. For the sweet and sour, using a sauce pan add the sweet and sour sauce (add chopped chilli if heat is required).
Cook the Battered fillet bites using your preferred cooking method then coat them in the sweet and sour sauce.
Layer the rice in a bowl and place the bites on top followed by a sprinkle of toasted sesame seeds. Use half a charred lime for garnish, serve.
Cooking options:
Oven Bake: Pre-heat oven to 220°C/ 425°F/ Gas mark 7, Place the battered chicken bites on a baking tray in the centre of the oven and bake for 15-20 minutes
Deep Fry: Pre-heat oil to 180°C/ 350°F, Fully immerse the battered chicken bites into the hot oil and fry for 5-6 minutes, drain and serve.
