This Salt & Pepper Chicken Chimichurri Focaccia Sandwich features a fusion of flavours packed into every bite for a punchy, street-food essential hit.

Ingredients
- Salt & Pepper Shredded Chicken x 75g
- Basil Pesto x 20g
- Focaccia x 1
- Rocket x 15g
- Tomato Slices x 3
- Swiss Cheese x 3 slices
- Coriander x 10g
- Chives x 10 g
- Red Chillies x 10g
- Olive Oil x 15m
Method
Step 1
Wash the rocket and slice the tomatoes.
Step 2
For the chimichurri, finely chop chives, coriander and chillies and bind with a little olive oil, adding salt to taste.
Step 3
Cook the Salt & Pepper Shredded Chicken using your preferred cooking method.
Step 4
Once cooked, place the shredded chicken in a mixing bowl and toss in chimichurri . Mix well so the chicken is evenly covered in sauce.
Step 5
Slice the focaccia and start layering with pesto then Swiss cheese, rocket and tomatoes, finishing with the shredded chicken. Serve.
