Piri Piri Grilled Chicken & Halloumi Burger
A healthier dish for those who like their burgers lean! This grilled chicken burger provides added protein thanks to a generous helping of grilled halloumi cheese, all served in a rustic ciabatta.

Ingredients
- Sizzling Piri Piri Chargrilled Chicken Fillet x 1
- Rustic Ciabatta x 1
- Halloumi Slices x 2
- Lettuce 10g
- Roasted Red Pepper 10g
- Pink Pickled Slaw 10g
- Low Fat Greek Yoghurt 10ml
- Mint 3g
- Lime x 1
- Hand Cut Crisps 15g
Method
Step 1
Start cooking the Sizzling Piri Piri Chargrilled Chicken Fillet using your preferred cooking method.
Step 2
Whilst the chicken is cooking slice the ciabatta in half then slice halloumi into evenly sized rectangles ready to griddle.
Step 3
Open up the roast pepper and cut down to required size.
Step 4
Roughly chop some mint and add to the yoghurt in a small bowl. Squeeze half a lime to the mixture then mix together to finish the mint & lime yoghurt.
Step 5
Add the halloumi strips to the griddle and cook until soft and nicely coloured. Whilst grilling the halloumi lightly toast your ciabatta until slightly golden.
Step 6
Once chicken is cooked begin to build the burger. Firstly add lime and mint yoghurt followed by lettuce and roasted red pepper. Then add Piri Piri fillet and halloumi. Serve with hand cut crisps and pink pickled slaw.
